    Step 1 – Clean and Blanch Pork Trotters
    1. Rinse pork trotters thoroughly under running water.
    2. Bring a large pot of water to boil.
    3. Add pork trotters and blanch for 5–8 minutes to remove impurities.
    4. Drain and rinse with clean water. Set aside.
    Step 2 – Prepare Ginger
    1. Wash ginger thoroughly. Do not peel.
    2. Slice into thick pieces for stronger aroma and warmth.
    Step 3 – Fry Ginger
    1. Heat sesame oil in a large pot over medium heat.
    2. Add ginger slices and stir-fry until fragrant and lightly browned.
    3. This step releases ginger oils and enhances flavor.
    Step 4 – Add Vinegar and Simmer
    1. Pour in sweet black vinegar and water.

    1. Turn off heat and let the dish rest for at least 4–6 hours or overnight.
